Cheezy Keen-wah Mini Muffins

Cheesy Quinoa Mini MuffinsMore on my explorations of quinoa! A good source of protein. This is a healthy snack that is also very tasty. They’re good warm and cold. AND, they travel fairly well.

Cheesy Quinoa Mini-Muffins
  • 2 cups cooked quinoa
  • 2 pastured eggs
  • 2 green onions, sliced thin
  • 1 cup grated carrot
  • ¼ cup chopped cilantro
  • ½ cup grated sharp cheddar cheese (about 1.5 ounces)
  • 2 cloves garlic, minced
  • 2 Tbsp whole wheat flour
  • ½ tsp cumin
  • ¾ tsp sea salt
  • ¼ tsp black pepper
  • paprika
  1. Preheat oven to 350.
  2. Spray mini-muffin pan well with olive oil.
  3. Combine all ingredients, except paprika, and mix well.
  4. Fill muffin cups.
  5. Sprinkle with paprika.
  6. Bake for 15-20 minutes, until they begin to brown around the edges.
  7. Makes 24 mini-muffins.
