Pasta Sauce

For years, I’ve made a spaghetti or pasta sauce that simmers all day long. It makes enough for many meals so I freeze it in servings for two. Recently, we wanted pasta but there was no sauce in the freezer. So, I created a quick pasta sauce. It cooked up in under an hour total time and is enough for 4 servings.

Ingredients
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ pound mushrooms, sliced
  • 1-2 Tbsp extra virgin olive oil
  • 2 cans (14.5 oz each) organic diced tomatoes
  • 8 chili piquins, crushed
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • Sea Salt, to taste
  • Pepper, to taste
  • Pasta Sauce
Instructions
  1. Heat olive oil in a good size pot.
  2. Sauté onion and garlic until transparent, about 5 minutes.
  3. Add mushrooms, stir, and cover.
  4. Cook for 5 minutes.
  5. Add tomatoes, chili piquins, oregano, and basil.
  6. Bring to a boil then reduce heat and simmer for 10-15 minutes.
  7. Season to taste with sea salt and pepper.
