Every year, I look for something different to bring into our holiday meals. I love experimenting and creating new recipes. So I’ve don’t a bit of a round up of recipes for you.

In recent posts I’ve highlighted cranberry recipes and holiday party ideas. Today I thought I would focus on vegetable dishes. (You can call them side dishes, if you must.)

Kale is a wonderful and versatile winter vegetable. This Kale Salad is a great dish that is actually better after it sits for a while. Or you could make either Braised Kale or Kale, Mushrooms, & Tomatoes.

Cauliflower is another vegetable to bring into you holiday meals. My sister includes it in her mashed potatoes and her kids are none the wiser. In fact, she told me recently that her son thought her mashed potatoes weren’t quite as good the time she had no cauliflower! Garlicky Roasted Cauliflower is a simple dish that turns out wonderful. It’s hard to not eat all of it in one sitting. Or if your feeling more adventurous, try my Cauliflower and Cheese recipe. It’s the same as making macaroni and cheese, except you use cauliflower. Added bonus: you don’t have to pre-cook the cauliflower!
