Squash Medley

This dish I created first in my head. It was inspired by a dish we had while dining out one Saturday. That dish had the yellow squash, zucchini, and tomatoes. This dish was also inspired by the ingredients we had on hand from our trip to the farmer’s market. The onion, mushrooms, yellow squash, zucchini, tomato, and coriander all came from the market. What this means to me is that everything is really fresh, picked within a day of our purchase.

Squash Medley
  • 1 Onion, cut in ½ inch squares - 1 cup
  • ¼ pound Mushrooms, thinly sliced
  • 3 - 4 cups Yellow Squash and Zucchini, thinly sliced
  • ½ cup Tomato, cut in ¼ pieces
  • 1 Tbsp Olive Oil
  • Ground toasted Coriander
  • Salt
  • Lemon Pepper

  2. Have all ingredients prepared and near the stove.
  3. Heat olive oil in a skillet over medium heat.
  4. Saute onion until transparent.
  5. Squash Medley - Onions
  6. Add mushrooms and cook for 5 minutes.
  7. Squash Medley - Onions & Mushrooms
  8. Add squash and cook for a few minutes. They should be firm when finished.
  9. Season with coriander, salt, and lemon pepper.
  10. Stir in tomatoes and serve.
